Greek Salad Tostadas with Hummus

INGREDIENTS

  • 4 Plain Delicious tortillas
  • Canola oil spray
  • 1 cup halved cherry tomatoes
  • ½ cup pitted and sliced kalamata olives
  • ½ cup diced cucumber
  • ½ cup crumbled Feta
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • Salt
  • Pepper
  • 1 (8 ounce) container of hummus

INSTRUCTIONS

Preheat the oven to 350°F. Line a sheet pan with parchment or foil. Arrange the tortillas on the prepared pan and lightly spray or brush with canola oil on each side. Transfer the pan to the oven and bake until the tortillas are crispy, 15 minutes. Let cool slightly.

Meanwhile, in a large bowl, combine the tomatoes, olives, cucumber, and feta. Drizzle with 2 tablespoons of olive oil, the juice of the lemon and 1 teaspoon of dried oregano. Stir to combine and season with salt and pepper.

Spread each tostada with a dollop of hummus. Heap with the Greek salad and serve.
