Charred Broccoli & Cheese Quesadillas with Avocado Crema

INGREDIENTS

  • 1 package Plain Delicious tortillas
  • 1 ripe avocado, peeled and pitted
  • ¾ cups sour cream
  • 2 tablespoons lime juice
  • Salt
  • Pepper
  • Olive oil
  • 1 head broccoli, cut into small florets
  • 1 (6 ounce) package shredded cheddar cheese

INSTRUCTIONS

In the bowl of a food processor or blender, combine the flesh of the avocado with the sour cream and lime juice. Blend until smooth, adding a splash of water to thin if necessary. Season to taste with salt and pepper.

In a cast-iron skillet over medium-high heat, warm 2 tablespoons of olive oil. Add the broccoli and cook, undisturbed, until it begins to char on the bottom, about 5 minutes. Transfer to a plate and season with salt and pepper.

Wipe out the pan and lower the heat to medium. Warm another tablespoon of olive oil and add a tortilla to the pan. Sprinkle with cheese, top with broccoli, and sprinkle with another layer of cheese. Add a tortilla on top and cook until the cheese melts and the tortilla is golden, 2-3 minutes. Flip and continue to cook until crisp, 2 minutes longer. Transfer to a plate or cutting board and keep warm. Repeat with the remaining tortillas, adding a drizzle of olive oil to the pan between batches if necessary.

Cut the quesadillas into wedges and serve warm, with the avocado crema on the side for dunking.
