- Canola oil spray
- 2 ripe avocados, peeled, pitted, and sliced
- 1 lemon, cut into wedges
- 2 tablespoons olive oil
- 4 eggs
Preheat the oven to 350°F. Line a sheet pan with parchment or foil. Arrange the tortillas on the prepared pan and lightly spray with the canola oil on each side. Transfer the pan to the oven and bake until the tortillas are crispy, 15 minutes.
Meanwhile, in a large non-stick skillet, warm 2 tablespoons of olive oil over medium-high heat. Crack the eggs into the pan and cook until the whites are set but the yolks are runny, about 3 minutes for sunny-side up. Arrange the avocado slices on the tortillas, squeeze with lemon, season with salt, and grind with pepper. Slide the eggs on top of the toasts and serve warm.
